Is there somewhere a reference or list,
where I can see all or other commands to write in the layout.json file to enable script execution.
e.g. "minFixtures": 1?

In a future update (hopefully within the next couple of months) the action menu will be made editable in a dialog in the program itself, so you will not need to edit those files manually. To that end, I have not really made a big deal out of the contents of these files.
Have you seen the help topic at "Action menu" -> "Customizing the action menu"? It covers all the available settings. By the way, the min/max properties are optional. Scripts will run just fine without them, it just makes it clearer for the end user, if they see the menu grayed out it will remind them that they need to select items for the script to work with. A well-written script will of course check that anyway, but any little thing that helps the user understand what's going on, and reduces wasted clicks, helps to improve the overall usability experience.
